The lamb belly is removed from the rib bones, seasoned with an herb and spice mix, and rolled. You can slow roast it dry tightly wrapped in foil, or half submerge it in stock, with some veggies, and slowly braise it. Either way count on at least a couple of hours to get it really tender. Super lamby, if you like that!
