Salt or brine your roast, sear in a pan and then roast in the oven. Calculate about 200g per person, but you'll probably want leftovers!

Brine recipe

120ml fine salt
120 granulated sugar
1L hot water

Dissolve salt and sugar in water and allow brine to cool

Note on brine: 
How long you brine a piece of meat depends entirely on the size and shape of that piece. A roast is a big and solid piece of meat, so you will want to brine if for at least a couple of hours. if you're brining smaller pieces, like pork chops, an hour should do.
